After graduating from Dixie Tech and honing his skills as a chef at the esteemed Painted Pony for three years, Indy realized a long-held dream of opening his own restaurant. Now, eight months into this exciting endeavor, He’s bringing a fresh and more refined dining experience to the Hildale community.
“I really enjoy having a creative outlet to express my love and passion for food,” Indy explains. Recognizing the limited dining options in Hildale, he was driven to create something different, a place where locals could savor a more upscale culinary experience.
The response from the community has been nothing short of amazing. “The local support is unreal,” Indy says with genuine gratitude. “I’m very lucky to have such supporting fans.” This strong local embrace has fueled him creativity and enthusiasm for the future.
Diners can look forward to exciting changes on the horizon. This weekend marks the debut of a new menu, brimming with vibrant spring flavors designed to tantalize the taste buds. Furthermore, Indy is on the cusp of completing a beautiful outdoor patio, envisioning a relaxed and inviting space for guests to enjoy their meals.
Adding another dimension to the Water Canyon Winery experience, Indy is planning to introduce a brunch menu on Saturdays and Sundays from 10 am to 2 pm. This will provide a delightful new option for weekend gatherings and leisurely meals. Currently, Indy’s kitchen is open Thursday through Sunday, from 4 pm to 8 pm, offering a delectable dinner service.
